Ingredients

  • Prawns - 300 grams, deveined
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, minced
  • Tomato - 1 medium, pureed
  • Kashmiri red chili powder - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Vinegar - 2 tablespoons
  • Salt - to taste
  • Black pepper - 1/4 teaspoon
  • Fresh coriander leaves - for garnish

Steps

  1. In a large skillet, heat the coconut oil over medium heat.
  2. Add the chopped onions and sauté until they become translucent.
  3. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Add the pureed tomato and cook until the oil starts to separate from the mixture.
  5. Mix in the Kashmiri red chili powder, turmeric powder, coriander powder, cumin powder, salt, and black pepper. Cook for 2-3 minutes.
  6. Add the prawns to the skillet, stirring well to coat them in the spice mixture.
  7. Pour in the vinegar and cook until the prawns are pink and cooked through, about 5-7 minutes.
  8. Taste and adjust seasoning if necessary. Remove from heat.
  9. Garnish with fresh coriander leaves before serving.
