- Cauliflower - 300 grams (riced)
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chili - 1 (finely chopped)
- Ginger - 1 teaspoon (grated)
- Onion - 1 small (finely chopped)
- Peas - 50 grams (optional, frozen or fresh)
- Curry leaves - 8-10 leaves
- Coriander leaves - 2 tablespoons (chopped)
- Lemon juice - 1 tablespoon
- Salt - to taste
- Coconut oil - 2 tablespoons
- Cashews - 2 tablespoons (optional, for garnish)
Steps
- Begin by ricing the cauliflower using a food processor or grater until it resembles rice grains.
- Heat coconut oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds, curry leaves, and chopped green chili.
- Add the grated ginger and chopped onion to the pan and sauté until the onion becomes translucent.
- Stir in turmeric powder and peas (if using) and cook for another 2 minutes.
- Add the riced cauliflower to the pan, season with salt, and mix well to combine all the ingredients.
- Cover the pan and cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove from heat and stir in fresh coriander leaves and lemon juice.
- Serve hot, garnished with roasted cashews if desired.
