Ingredients

  • Cauliflower - 300 grams (riced)
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili - 1 (finely chopped)
  • Ginger - 1 teaspoon (grated)
  • Onion - 1 small (finely chopped)
  • Peas - 50 grams (optional, frozen or fresh)
  • Curry leaves - 8-10 leaves
  • Coriander leaves - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Coconut oil - 2 tablespoons
  • Cashews - 2 tablespoons (optional, for garnish)

Steps

  1. Begin by ricing the cauliflower using a food processor or grater until it resembles rice grains.
  2. Heat coconut oil in a pan over medium heat and add mustard seeds. Once they start to splutter, add cumin seeds, curry leaves, and chopped green chili.
  3. Add the grated ginger and chopped onion to the pan and sauté until the onion becomes translucent.
  4. Stir in turmeric powder and peas (if using) and cook for another 2 minutes.
  5. Add the riced cauliflower to the pan, season with salt, and mix well to combine all the ingredients.
  6. Cover the pan and cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  7. Remove from heat and stir in fresh coriander leaves and lemon juice.
  8. Serve hot, garnished with roasted cashews if desired.
