Ingredients

  • Almond flour - 150 grams
  • Coconut flour - 30 grams
  • Psyllium husk - 1 tablespoon
  • Water - 120 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cauliflower - 200 grams, grated
  • Spinach - 50 grams, chopped
  • Onion - 1 small, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, psyllium husk, salt, and olive oil.
  2. Gradually add water to the dry ingredients and knead until a smooth dough forms. Cover and let it rest for 10 minutes.
  3. In a pan, heat coconut oil over medium heat. Add chopped onion and sauté until translucent.
  4. Add grated cauliflower, chopped spinach, ginger, cumin powder, turmeric powder, and black pepper. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and let it cool.
  5. Divide the dough into equal portions and roll each portion into small discs (about 10 cm in diameter).
  6. Place a spoonful of the vegetable filling in the center of each disc and fold the edges to seal them, forming a dumpling.
  7. Heat coconut oil in a pan over medium heat and pan-fry the dumplings until golden brown on both sides, about 4-5 minutes per side.
  8. Serve hot with a side of low-carb yogurt dip or chutney.
