- Almond flour - 150 grams
- Coconut flour - 30 grams
- Psyllium husk - 1 tablespoon
- Water - 120 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Cauliflower - 200 grams, grated
- Spinach - 50 grams, chopped
- Onion - 1 small, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - for frying
Steps
- In a mixing bowl, combine almond flour, coconut flour, psyllium husk, salt, and olive oil.
- Gradually add water to the dry ingredients and knead until a smooth dough forms. Cover and let it rest for 10 minutes.
- In a pan, heat coconut oil over medium heat. Add chopped onion and sauté until translucent.
- Add grated cauliflower, chopped spinach, ginger, cumin powder, turmeric powder, and black pepper. Cook for about 5-7 minutes until the vegetables are tender. Remove from heat and let it cool.
- Divide the dough into equal portions and roll each portion into small discs (about 10 cm in diameter).
- Place a spoonful of the vegetable filling in the center of each disc and fold the edges to seal them, forming a dumpling.
- Heat coconut oil in a pan over medium heat and pan-fry the dumplings until golden brown on both sides, about 4-5 minutes per side.
- Serve hot with a side of low-carb yogurt dip or chutney.
