- Pine nuts - 30g
- Parmesan cheese, grated - 30g
- Garlic cloves - 2, minced
- Olive oil - 60ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - 1/2 teaspoon (optional)
Steps
- Using a spiralizer, create zucchini noodles from the zucchinis and set aside.
- In a food processor, combine fresh basil leaves, pine nuts, grated Parmesan cheese, minced garlic, lemon juice, salt, and black pepper.
- While processing, gradually drizzle in olive oil until the mixture is smooth and well combined.
- In a large skillet over medium heat, add the zucchini noodles and sauté for about 2-3 minutes until slightly softened.
- Remove the skillet from heat and fold in the prepared pesto, ensuring the zoodles are well coated.
