Ingredients

  • Zucchini - 2 medium (about 400g)
  • Fresh basil leaves - 1 cup (packed)
  • Pine nuts - 30g
  • Parmesan cheese, grated - 30g
  • Garlic cloves - 2, minced
  • Olive oil - 60ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Using a spiralizer, create zucchini noodles from the zucchinis and set aside.
  2. In a food processor, combine fresh basil leaves, pine nuts, grated Parmesan cheese, minced garlic, lemon juice, salt, and black pepper.
  3. While processing, gradually drizzle in olive oil until the mixture is smooth and well combined.
  4. In a large skillet over medium heat, add the zucchini noodles and sauté for about 2-3 minutes until slightly softened.
  5. Remove the skillet from heat and fold in the prepared pesto, ensuring the zoodles are well coated.
  6. Add red chili flakes for a bit of heat, if desired, and serve immediately.
