- Besan (chickpea flour) - 100 grams
- Basil leaves - 30 grams
- Parmesan cheese - 30 grams, grated
- Olive oil - 2 tablespoons
- Greek yogurt - 50 grams
- Baking soda - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 100 ml
- Pine nuts - 10 grams, toasted (for garnish)
Steps
- In a blender, combine basil leaves, olive oil, grated Parmesan cheese, Greek yogurt, salt, and black pepper. Blend until smooth to create the pesto.
- In a mixing bowl, combine besan, baking soda, and water. Mix well until you have a smooth batter.
- Fold the prepared pesto into the besan batter until well combined.
- Grease a steaming dish or dhokla mold with olive oil. Pour the batter into the mold, spreading it evenly.
- Fill a steamer with water and bring it to a boil. Place the mold in the steamer and cover it.
- Steam the dhokla for about 20 minutes, or until a toothpick inserted in the center comes out clean.
- Once cooked, remove the dhokla from the steamer and let it cool for a few minutes.
- Cut the dhokla into squares and garnish with toasted pine nuts before serving.
