Keto Pesarattu

Ingredients
- Green moong dal - 100 grams
- Water - 200 ml
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Cumin seeds - 1/2 teaspoon
- Salt - to taste
- Coconut oil - 2 tablespoons (for cooking)
- Fresh coriander leaves - 2 tablespoons, chopped (optional)
Steps
- Rinse the green moong dal under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Drain the soaked dal and transfer it to a blender. Add 200 ml of fresh water, ginger, green chili, cumin seeds, and salt. Blend until you achieve a smooth batter.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of coconut oil.
- Pour a ladleful of the batter onto the skillet and spread it into a thin, even circle.
- Cook for about 2-3 minutes until the bottom is golden brown, then drizzle another 1/2 tablespoon of coconut oil around the edges.
- Flip the dosa and cook for an additional 2 minutes until golden brown. Repeat with the remaining batter, adding oil as needed.
- Serve hot with coconut chutney or sliced avocado, and garnish with fresh coriander leaves if desired.
