Ingredients

  • Almond flour - 100 grams
  • Unsweetened shredded coconut - 50 grams
  • Erythritol - 30 grams
  • Ghee - 2 tablespoons
  • Heavy cream - 50 ml
  • Cardamom powder - 1/2 teaspoon
  • Chopped pistachios (for garnish) - 1 tablespoon

Steps

  1. In a non-stick pan, heat the ghee over medium heat.
  2. Add the almond flour and shredded coconut, stirring continuously for about 5 minutes until it becomes aromatic.
  3. Stir in the erythritol and cardamom powder, mixing well.
  4. Pour in the heavy cream and cook for another 5-7 minutes until the mixture thickens and starts to leave the sides of the pan.
  5. Remove from heat and let the mixture cool slightly until it can be handled.
  6. Grease your palms with a little ghee and shape the mixture into small round pedas.
  7. Garnish each peda with chopped pistachios and let them cool completely before serving.
