- Cumin powder - 1/2 tsp
- Chili powder - 1/2 tsp
- Finely chopped bell pepper - 1/4 cup
- Finely chopped onion - 1/4 cup
- Grated mozzarella cheese - 1/2 cup
- Olive oil - 2 tbsp
- Fresh basil leaves - 1/4 cup
Steps
- In a mixing bowl, combine almond flour, baking powder, salt, black pepper, cumin powder, and chili powder.
- In another bowl, whisk the eggs until frothy and then add them to the dry ingredients, mixing until well combined.
- Fold in the chopped bell pepper, onion, and grated mozzarella cheese into the batter.
- Heat a paniyaram pan over medium heat and drizzle a little olive oil into each cavity.
- Once the oil is hot, pour the batter into each cavity, filling them about 3/4 full.
- Cover the pan with a lid and cook for about 5-7 minutes or until the bottoms are golden brown.
- Flip each paniyaram carefully using a skewer or fork and cook for another 5 minutes until cooked through.
- Remove the paniyarams from the pan and place them on a serving plate.
- Top each paniyaram with fresh basil leaves and additional mozzarella cheese if desired.
