Ingredients

  • Zucchini - 2 medium, spiralized
  • Fresh spinach - 200 grams
  • Cream cheese - 100 grams
  • Heavy cream - 100 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped (optional)
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams

Steps

  1. Heat olive oil in a pan over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
  2. Add chopped green chili, if using, followed by fresh spinach. Cook until the spinach wilts down, about 3-4 minutes.
  3. Stir in the cream cheese and heavy cream, mixing until the cream cheese melts and a smooth sauce forms.
  4. Add cumin powder, salt, and black pepper to taste. Mix well and let it simmer for another 5 minutes.
  5. In a separate pot, lightly sauté the spiralized zucchini in a little olive oil for about 3-4 minutes until slightly tender.
