- Zucchini - 2 medium, spiralized
- Fresh spinach - 200 grams
- Cream cheese - 100 grams
- Heavy cream - 100 ml
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped (optional)
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese - 30 grams
Steps
- Heat olive oil in a pan over medium heat. Add minced garlic and grated ginger, sautéing until fragrant.
- Add chopped green chili, if using, followed by fresh spinach. Cook until the spinach wilts down, about 3-4 minutes.
- Stir in the cream cheese and heavy cream, mixing until the cream cheese melts and a smooth sauce forms.
- Add cumin powder, salt, and black pepper to taste. Mix well and let it simmer for another 5 minutes.
- In a separate pot, lightly sauté the spiralized zucchini in a little olive oil for about 3-4 minutes until slightly tender.
- Combine the sautéed zucchini with the spinach sauce and mix thoroughly.
