- Fresh spinach - 300 grams
- Paneer (Indian cottage cheese) - 200 grams, cubed
- Ghee (clarified butter) - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit (optional)
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Heavy cream - 100 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Blanch the spinach in boiling water for 2-3 minutes, then drain and immediately transfer to ice water to retain its color. After a few minutes, drain again and blend to a smooth puree.
- In a pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown. Then, add minced garlic, grated ginger, and slit green chili, cooking for an additional minute.
- Stir in turmeric powder and garam masala, mixing well before adding the spinach puree. Cook for about 5 minutes, stirring occasionally.
- Add salt and black pepper to taste, then pour in the heavy cream, stirring until well combined. Cook for another 3-5 minutes.
- Gently fold in the cubed paneer and cook for an additional 2-3 minutes until the paneer is heated through.
- Serve hot, garnished with a drizzle of cream or a sprinkle of garam masala, if desired.
