Ingredients

  • Fresh spinach - 300 grams
  • Paneer (Indian cottage cheese) - 200 grams, cubed
  • Ghee (clarified butter) - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Heavy cream - 100 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Blanch the spinach in boiling water for 2-3 minutes, then drain and immediately transfer to ice water to retain its color. After a few minutes, drain again and blend to a smooth puree.
  2. In a pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown. Then, add minced garlic, grated ginger, and slit green chili, cooking for an additional minute.
  4. Stir in turmeric powder and garam masala, mixing well before adding the spinach puree. Cook for about 5 minutes, stirring occasionally.
  5. Add salt and black pepper to taste, then pour in the heavy cream, stirring until well combined. Cook for another 3-5 minutes.
  6. Gently fold in the cubed paneer and cook for an additional 2-3 minutes until the paneer is heated through.
  7. Serve hot, garnished with a drizzle of cream or a sprinkle of garam masala, if desired.
