- Palak (spinach) - 200 grams
- Cauliflower rice - 200 grams
- Ghee - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Green chili (finely chopped) - 1
- Turmeric powder - 1/2 teaspoon
- Garlic (finely chopped) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 cup
- Lemon juice - 1 tablespoon
- Coriander leaves (chopped) - for garnish
Steps
- Wash and chop the spinach (palak) and set aside.
- In a pan, heat ghee over medium heat and add cumin seeds. Once they start to splutter, add the grated ginger and chopped green chili, sautéing for a minute.
- Add the chopped spinach to the pan and cook until wilted, stirring occasionally.
- Stir in the grated cauliflower rice, turmeric powder, garlic, salt, and black pepper. Mix well.
- Pour in the water and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 10-15 minutes until the cauliflower is cooked and the water has mostly evaporated.
- Once cooked, remove from heat and add lemon juice, mixing well.
- Serve hot, garnished with chopped coriander leaves.
