Ingredients

  • Palak (spinach) - 200 grams
  • Cauliflower rice - 200 grams
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Green chili (finely chopped) - 1
  • Turmeric powder - 1/2 teaspoon
  • Garlic (finely chopped) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 cup
  • Lemon juice - 1 tablespoon
  • Coriander leaves (chopped) - for garnish

Steps

  1. Wash and chop the spinach (palak) and set aside.
  2. In a pan, heat ghee over medium heat and add cumin seeds. Once they start to splutter, add the grated ginger and chopped green chili, sautéing for a minute.
  3. Add the chopped spinach to the pan and cook until wilted, stirring occasionally.
  4. Stir in the grated cauliflower rice, turmeric powder, garlic, salt, and black pepper. Mix well.
  5. Pour in the water and bring it to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 10-15 minutes until the cauliflower is cooked and the water has mostly evaporated.
  6. Once cooked, remove from heat and add lemon juice, mixing well.
  7. Serve hot, garnished with chopped coriander leaves.
