Ingredients

  • Spinach - 200 grams
  • Canned chickpeas - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 100 ml

Steps

  1. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to ice-cold water to retain its green color.
  2. Once cooled, blend the spinach into a smooth puree and set aside.
  3. In a pan, heat olive oil over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions and sauté until they turn golden brown.
  5. Stir in the grated ginger, minced garlic, and slit green chili, cooking for another minute until fragrant.
  6. Add the pureed tomato and cook for 5-7 minutes until the oil separates from the mixture.
  7. Incorporate the coriander powder, turmeric powder, and salt, stirring well to combine.
  8. Add the canned chickpeas and mix them into the masala, cooking for 2-3 minutes.
  9. Pour in the spinach puree and mix well. If the mixture is too thick, add water to achieve your desired consistency.
  10. Simmer for 5-7 minutes, allowing the flavors to meld together.
  11. Finish with garam masala and lemon juice, stirring well before serving.
