- Spinach - 200 grams
- Canned chickpeas - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon

- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 100 ml
Steps
- Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and immediately transfer to ice-cold water to retain its green color.
- Once cooled, blend the spinach into a smooth puree and set aside.
- In a pan, heat olive oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another minute until fragrant.
- Add the pureed tomato and cook for 5-7 minutes until the oil separates from the mixture.
- Incorporate the coriander powder, turmeric powder, and salt, stirring well to combine.
- Add the canned chickpeas and mix them into the masala, cooking for 2-3 minutes.
- Pour in the spinach puree and mix well. If the mixture is too thick, add water to achieve your desired consistency.
- Simmer for 5-7 minutes, allowing the flavors to meld together.
- Finish with garam masala and lemon juice, stirring well before serving.
