- Beef shank - 500 grams
- Ghee - 3 tablespoons
- Onion - 1 medium, finely sliced
- Ginger paste - 1 tablespoon
- Garlic paste - 1 tablespoon
- Nihari spice mix - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green chili - 1, slit
- Water - 4 cups
- Fresh cilantro - for garnish
- Lemon wedges - for serving
Steps
- In a heavy-bottomed pot, heat the ghee over medium heat and add the sliced onions. Sauté until they are golden brown.
- Add the ginger and garlic paste to the pot, stirring well for about 2 minutes until fragrant.
- Introduce the beef shank to the pot, browning it on all sides for about 5-7 minutes.
- Sprinkle in the Nihari spice mix, salt, and black pepper. Mix well to coat the meat with the spices.
- Pour in the water, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours until the meat is tender and falls off the bone.
- Once cooked, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh cilantro and accompanied by lemon wedges.
