Ingredients

  • Beef shank - 500 grams
  • Ghee - 3 tablespoons
  • Onion - 1 medium, finely sliced
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Nihari spice mix - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green chili - 1, slit
  • Water - 4 cups
  • Fresh cilantro - for garnish
  • Lemon wedges - for serving

Steps

  1. In a heavy-bottomed pot, heat the ghee over medium heat and add the sliced onions. Sauté until they are golden brown.
  2. Add the ginger and garlic paste to the pot, stirring well for about 2 minutes until fragrant.
  3. Introduce the beef shank to the pot, browning it on all sides for about 5-7 minutes.
  4. Sprinkle in the Nihari spice mix, salt, and black pepper. Mix well to coat the meat with the spices.
  5. Pour in the water, bringing the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours until the meat is tender and falls off the bone.
  6. Once cooked, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh cilantro and accompanied by lemon wedges.
