- Mutton (bone-in, cut into pieces) - 500 grams
- Ghee (clarified butter) - 3 tablespoons
- Onion (finely chopped) - 1 medium
- Ginger paste - 1 tablespoon
- Garlic paste - 1 tablespoon
- Tomato puree - 2 tablespoons
- Yogurt (full-fat) - 100 grams
- Kashmiri red chili powder - 2 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Water - 1 cup
- Fresh cilantro (for garnish) - a handful
Steps
- Heat ghee in a heavy-bottomed pot over medium heat. Once hot, add the chopped onions and sauté until they turn golden brown.
- Add ginger and garlic paste to the onions and cook for another 2-3 minutes until the raw smell disappears.
- Stir in the Kashmiri red chili powder, cumin powder, coriander powder, turmeric powder, and salt. Sauté the spices for about 2 minutes until fragrant.
- Add the mutton pieces to the pot, stirring well to coat them with the spice mixture. Cook for 5-7 minutes until the meat is browned on all sides.
- Pour in the tomato puree and mix well. Cook for another 5 minutes to allow the flavors to meld.
- Lower the heat and add the yogurt, stirring continuously to prevent curdling. Cook for another 5 minutes.
- Add water to the pot, cover, and simmer on low heat for about 60 minutes, or until the mutton is tender, stirring occasionally.
- Once the mutton is cooked, sprinkle garam masala over the curry and mix well. Cook for an additional 5 minutes.
- Garnish with fresh cilantro and serve hot.
