Ingredients

  • Mutton (bone-in, cut into pieces) - 500 grams
  • Ghee (clarified butter) - 3 tablespoons
  • Onion (finely chopped) - 1 medium
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Tomato puree - 2 tablespoons
  • Yogurt (full-fat) - 100 grams
  • Kashmiri red chili powder - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Water - 1 cup
  • Fresh cilantro (for garnish) - a handful

Steps

  1. Heat ghee in a heavy-bottomed pot over medium heat. Once hot, add the chopped onions and sauté until they turn golden brown.
  2. Add ginger and garlic paste to the onions and cook for another 2-3 minutes until the raw smell disappears.
  3. Stir in the Kashmiri red chili powder, cumin powder, coriander powder, turmeric powder, and salt. Sauté the spices for about 2 minutes until fragrant.
  4. Add the mutton pieces to the pot, stirring well to coat them with the spice mixture. Cook for 5-7 minutes until the meat is browned on all sides.
  5. Pour in the tomato puree and mix well. Cook for another 5 minutes to allow the flavors to meld.
  6. Lower the heat and add the yogurt, stirring continuously to prevent curdling. Cook for another 5 minutes.
  7. Add water to the pot, cover, and simmer on low heat for about 60 minutes, or until the mutton is tender, stirring occasionally.
  8. Once the mutton is cooked, sprinkle garam masala over the curry and mix well. Cook for an additional 5 minutes.
  9. Garnish with fresh cilantro and serve hot.
