Ingredients

  • Mutton (bone-in, cut into pieces) - 500 grams
  • Ghee - 3 tablespoons
  • Onion (finely sliced) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Nihari spice mix - 2 tablespoons
  • Salt - to taste
  • Water - 3 cups
  • Fresh cilantro (chopped) - for garnish
  • Green chilies (slit) - 2
  • Lemon wedges - for serving

Steps

  1. Heat the ghee in a heavy-bottomed pot over medium heat.
  2. Add the sliced onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and cook for another 2 minutes until fragrant.
  4. Add the mutton pieces and sauté for about 5-7 minutes until they are browned on all sides.
  5. Mix in the Nihari spice mix and salt, stirring well to coat the meat.
  6. Pour in the water, bring to a boil, then reduce the heat to low and cover the pot.
  7. Let it simmer for about 2-3 hours, or until the mutton is tender and the flavors meld together, stirring occasionally.
  8. Once cooked, adjust seasoning if necessary and garnish with fresh cilantro and slit green chilies.
  9. Serve hot with lemon wedges on the side.
