- Mutton (bone-in, cut into pieces) - 500 grams
- Ghee - 3 tablespoons
- Onion (finely sliced) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Nihari spice mix - 2 tablespoons
- Salt - to taste
- Water - 3 cups
- Fresh cilantro (chopped) - for garnish
- Green chilies (slit) - 2
- Lemon wedges - for serving
Steps
- Heat the ghee in a heavy-bottomed pot over medium heat.
- Add the sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for another 2 minutes until fragrant.
- Add the mutton pieces and sauté for about 5-7 minutes until they are browned on all sides.
- Mix in the Nihari spice mix and salt, stirring well to coat the meat.
- Pour in the water, bring to a boil, then reduce the heat to low and cover the pot.
- Let it simmer for about 2-3 hours, or until the mutton is tender and the flavors meld together, stirring occasionally.
- Once cooked, adjust seasoning if necessary and garnish with fresh cilantro and slit green chilies.
- Serve hot with lemon wedges on the side.
