Ingredients

  • Mutton - 300 grams, cut into bite-sized pieces
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chilies - 2, slit
  • Tomato - 1 medium, pureed
  • Curry powder - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Coconut milk - 200 ml
  • Fresh cilantro - for garnish

Steps

  1. Heat coconut oil in a heavy-bottomed pot over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies; sauté for 2-3 minutes until fragrant.
  4. Add the mutton pieces to the pot and sear them until browned on all sides.
  5. Stir in the tomato puree, curry powder, turmeric powder, and salt; cook for 5 minutes to combine the flavors.
  6. Pour in the coconut milk and bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for 30 minutes or until the mutton is tender.
  8. Once cooked, sprinkle garam masala over the curry and mix well.
  9. Garnish with fresh cilantro before serving.
