- Mushrooms (button or cremini) - 200 grams, chopped

- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Coconut oil - 2 tablespoons
- Coconut milk - 200 ml
- Vegetable broth - 300 ml
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat 2 tablespoons of coconut oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
- Add the chopped mushrooms to the pot and cook for about 5-7 minutes, until they release their moisture and start to brown.
- Sprinkle cumin powder, turmeric powder, salt, and black pepper over the mushrooms, stirring to combine.
- Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10 minutes to allow flavors to meld.
- Reduce heat and stir in the coconut milk. Heat through for another 5 minutes without boiling.
- Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches, then return to the pot.
- Taste and adjust seasoning as necessary before serving.
- Garnish with fresh coriander leaves and serve hot.
