Ingredients

  • Mushrooms - 200 grams, sliced
  • Cauliflower rice - 300 grams
  • Ghee (clarified butter) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Ginger, minced - 1 teaspoon
  • Garlic, minced - 1 teaspoon
  • Green chili - 1, slit
  • Onion - 1 small, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Fresh coriander leaves - a handful, chopped
  • Salt - to taste
  • Water - 1/2 cup

Steps

  1. Heat ghee in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add minced ginger, garlic, and slit green chili. Sauté for about 1 minute until fragrant.
  3. Stir in the chopped onion and cook until translucent, about 3-4 minutes.
  4. Add the sliced mushrooms and cook for about 5-7 minutes until they release moisture and start to brown.
  5. Sprinkle in the turmeric powder and garam masala, mixing well to coat the mushrooms. Cook for another 2 minutes.
  6. Add the cauliflower rice, stirring to combine with the mushroom mixture.
  7. Pour in the water and season with salt. Cover the pan and let it simmer for about 5-7 minutes until the cauliflower rice is tender.
  8. Remove from heat and garnish with fresh coriander leaves before serving.
