- Mushrooms - 200 grams, sliced
- Cauliflower rice - 300 grams
- Ghee (clarified butter) - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Ginger, minced - 1 teaspoon
- Garlic, minced - 1 teaspoon
- Green chili - 1, slit
- Onion - 1 small, finely chopped
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Fresh coriander leaves - a handful, chopped
- Salt - to taste
- Water - 1/2 cup
Steps
- Heat ghee in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add minced ginger, garlic, and slit green chili. Sauté for about 1 minute until fragrant.
- Stir in the chopped onion and cook until translucent, about 3-4 minutes.
- Add the sliced mushrooms and cook for about 5-7 minutes until they release moisture and start to brown.
- Sprinkle in the turmeric powder and garam masala, mixing well to coat the mushrooms. Cook for another 2 minutes.
- Add the cauliflower rice, stirring to combine with the mushroom mixture.
- Pour in the water and season with salt. Cover the pan and let it simmer for about 5-7 minutes until the cauliflower rice is tender.
- Remove from heat and garnish with fresh coriander leaves before serving.
