- Cauliflower - 300 grams
- Fresh methi (fenugreek) leaves - 50 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Coconut oil - 1 tablespoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Start by preparing the cauliflower rice: wash and chop the cauliflower into florets, then pulse in a food processor until it resembles rice.
- Heat coconut oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion to the pan and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 1-2 minutes until fragrant.
- Add the chopped methi leaves to the pan and cook for 3-4 minutes until wilted.
- Sprinkle in turmeric powder, garam masala, and salt, mixing well to combine all the spices.
- Add the cauliflower rice to the pan, stirring to incorporate with the methi mixture. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Remove from heat and garnish with fresh coriander leaves before serving.
