Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Fresh methi (fenugreek) leaves - 1/2 cup, chopped
  • Psyllium husk - 1 tablespoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 1/4 cup (as needed)
  • Olive oil - 2 tablespoons (for cooking)

Steps

  1. In a mixing bowl, combine the almond flour, coconut flour, psyllium husk, garam masala, and salt.
  2. Add the chopped methi leaves to the dry ingredients and mix well.
  3. Gradually add water to the mixture, kneading until a soft dough forms. If the dough is too crumbly, add a little more water, one tablespoon at a time.
  4. Divide the dough into 4 equal portions and shape each portion into a ball.
  5. On a lightly greased parchment paper, roll out each ball into a flat disc (paratha) about 6 inches in diameter.
  6. Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil.
  7. Place one rolled paratha on the skillet and cook for 2-3 minutes until golden brown on one side. Flip and cook the other side for another 2-3 minutes, adding more oil if necessary.
  8. Repeat the process for the remaining dough balls.
  9. Serve hot with a side of yogurt or your favorite low-carb dip.
