- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Fresh methi (fenugreek) leaves - 1/2 cup, chopped
- Psyllium husk - 1 tablespoon
- Garam masala - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 1/4 cup (as needed)
- Olive oil - 2 tablespoons (for cooking)
Steps
- In a mixing bowl, combine the almond flour, coconut flour, psyllium husk, garam masala, and salt.
- Add the chopped methi leaves to the dry ingredients and mix well.
- Gradually add water to the mixture, kneading until a soft dough forms. If the dough is too crumbly, add a little more water, one tablespoon at a time.
- Divide the dough into 4 equal portions and shape each portion into a ball.
- On a lightly greased parchment paper, roll out each ball into a flat disc (paratha) about 6 inches in diameter.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of olive oil.
- Place one rolled paratha on the skillet and cook for 2-3 minutes until golden brown on one side. Flip and cook the other side for another 2-3 minutes, adding more oil if necessary.
- Repeat the process for the remaining dough balls.
- Serve hot with a side of yogurt or your favorite low-carb dip.
