- Chicken thighs, boneless - 300 grams
- Fresh methi (fenugreek leaves) - 100 grams
- Heavy cream - 150 ml
- Ghee - 2 tablespoons
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 4 cloves
- Ginger, grated - 1 inch piece
- Green chili, slit - 1
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Water - 100 ml
Steps
- Heat ghee in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
- Add turmeric powder and red chili powder, mixing well before adding the chicken thighs. Cook for about 5 minutes until the chicken is browned on all sides.
- Pour in water, cover the pan, and let it simmer for 15 minutes or until the chicken is cooked through.
- Add the fresh methi leaves and heavy cream to the pan, stirring gently to combine. Cook for an additional 5 minutes until the sauce thickens.
- Sprinkle garam masala and salt to taste, mixing well before removing from heat.
- Serve hot, garnished with fresh methi leaves or a drizzle of cream, alongside a keto-friendly side.
