Ingredients

  • Chicken thighs, boneless - 300 grams
  • Fresh methi (fenugreek leaves) - 100 grams
  • Heavy cream - 150 ml
  • Ghee - 2 tablespoons
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 4 cloves
  • Ginger, grated - 1 inch piece
  • Green chili, slit - 1
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Water - 100 ml

Steps

  1. Heat ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
  4. Add turmeric powder and red chili powder, mixing well before adding the chicken thighs. Cook for about 5 minutes until the chicken is browned on all sides.
  5. Pour in water, cover the pan, and let it simmer for 15 minutes or until the chicken is cooked through.
  6. Add the fresh methi leaves and heavy cream to the pan, stirring gently to combine. Cook for an additional 5 minutes until the sauce thickens.
  7. Sprinkle garam masala and salt to taste, mixing well before removing from heat.
  8. Serve hot, garnished with fresh methi leaves or a drizzle of cream, alongside a keto-friendly side.
