Ingredients

  • Fresh methi leaves (fenugreek) - 100 grams
  • Coconut cream - 200 ml
  • Ghee (clarified butter) - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Black pepper powder - 1/4 teaspoon
  • Kasuri methi (dried fenugreek leaves) - 1 teaspoon
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the fresh methi leaves thoroughly and chop them coarsely.
  2. In a pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
  3. Add minced garlic, grated ginger, and slit green chili to the pan. Sauté until fragrant.
  4. Stir in the chopped methi leaves and cook for about 5-7 minutes until they wilt and soften.
  5. Add turmeric powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
  6. Pour in the coconut cream and stir until well combined. Let it simmer for 5 minutes on low heat.
  7. Add black pepper powder and kasuri methi. Mix well and cook for an additional 2 minutes.
  8. Remove from heat and garnish with fresh coriander leaves before serving.
