Ingredients
- Fresh methi leaves (fenugreek) - 100 grams
- Coconut cream - 200 ml
- Ghee (clarified butter) - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Black pepper powder - 1/4 teaspoon
- Kasuri methi (dried fenugreek leaves) - 1 teaspoon
- Fresh coriander leaves - for garnish
Steps
- Wash the fresh methi leaves thoroughly and chop them coarsely.
- In a pan, heat ghee over medium heat. Add cumin seeds and let them splutter.
- Add minced garlic, grated ginger, and slit green chili to the pan. Sauté until fragrant.
- Stir in the chopped methi leaves and cook for about 5-7 minutes until they wilt and soften.
- Add turmeric powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
- Pour in the coconut cream and stir until well combined. Let it simmer for 5 minutes on low heat.
- Add black pepper powder and kasuri methi. Mix well and cook for an additional 2 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
