- Chicken thighs - 400 grams, boneless and skinless
- Fresh methi (fenugreek) leaves - 50 grams, chopped
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Tomato - 1 medium, pureed
- Coconut cream - 100 ml
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 100 ml
Steps
- Heat the coconut oil in a pan over medium heat.
- Add the chopped onion and sauté until it turns golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili; sauté for another minute.
- Add the chicken thighs and cook until they are browned on all sides.
- Pour in the pureed tomato and mix well, cooking for about 5 minutes until the mixture thickens.
- Sprinkle the cumin powder, coriander powder, turmeric powder, and salt; stir to combine.
- Add the chopped methi leaves and water, cover, and let it simmer for 10 minutes on low heat.
- Stir in the coconut cream and garam masala, cooking for an additional 5 minutes.
- Adjust seasoning with black pepper and serve hot.
