Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Fresh methi (fenugreek) leaves - 50 grams, chopped
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Tomato - 1 medium, pureed
  • Coconut cream - 100 ml
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 100 ml

Steps

  1. Heat the coconut oil in a pan over medium heat.
  2. Add the chopped onion and sauté until it turns golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili; sauté for another minute.
  4. Add the chicken thighs and cook until they are browned on all sides.
  5. Pour in the pureed tomato and mix well, cooking for about 5 minutes until the mixture thickens.
  6. Sprinkle the cumin powder, coriander powder, turmeric powder, and salt; stir to combine.
  7. Add the chopped methi leaves and water, cover, and let it simmer for 10 minutes on low heat.
  8. Stir in the coconut cream and garam masala, cooking for an additional 5 minutes.
  9. Adjust seasoning with black pepper and serve hot.
