Ingredients

  • Chicken breast - 300 grams, cubed
  • Fresh methi (fenugreek) leaves - 100 grams, chopped
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat and add cumin seeds. Once they splutter, add the finely chopped onion and sauté until golden brown.
  2. Add ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  3. Stir in the turmeric powder, red chili powder, and salt. Cook for another minute to combine the spices.
  4. Add the cubed chicken to the pan and cook until the chicken is no longer pink, about 5-7 minutes.
  5. Mix in the chopped methi leaves and cover the pan. Let it cook for about 5-7 minutes until the chicken is cooked through and the methi leaves wilt.
  6. Sprinkle garam masala over the dish and mix well. Cook for an additional 2 minutes.
  7. Garnish with fresh coriander leaves and serve hot.
