- Chicken breast - 300 grams, cubed
- Fresh methi (fenugreek) leaves - 100 grams, chopped
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Coconut oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat coconut oil in a pan over medium heat and add cumin seeds. Once they splutter, add the finely chopped onion and sauté until golden brown.
- Add ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Stir in the turmeric powder, red chili powder, and salt. Cook for another minute to combine the spices.
- Add the cubed chicken to the pan and cook until the chicken is no longer pink, about 5-7 minutes.
- Mix in the chopped methi leaves and cover the pan. Let it cook for about 5-7 minutes until the chicken is cooked through and the methi leaves wilt.
- Sprinkle garam masala over the dish and mix well. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves and serve hot.
