Ingredients

  • Masoor dal (red lentils) - 100g
  • Almond flour - 50g
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish
  • Water - 250ml

Steps

  1. Rinse the masoor dal thoroughly under running water until the water runs clear.
  2. In a pot, add the rinsed dal and 250ml of water. Bring it to a boil, then lower the heat and let it simmer for about 15 minutes or until the dal is soft and cooked through.
  3. Once cooked, drain any excess water and mash the dal using a fork or potato masher until smooth.
  4. In a mixing bowl, combine the mashed dal, almond flour, egg, salt, cumin seeds, turmeric powder, minced garlic, grated ginger, and chopped green chili. Mix until a dough forms.
  5. On a lightly floured surface (using almond flour), roll out the dough into thin sheets, about 1/4 inch thick. Cut into your desired pasta shape (like fettuccine or tagliatelle).
  6. In a large skillet, heat olive oil over medium heat. Add the freshly cut pasta and sauté for about 3-4 minutes until slightly golden.
  7. Serve the keto masoor dal pasta hot, garnished with fresh coriander.
