Ingredients
- Masoor dal (red lentils) - 100g
- Almond flour - 50g
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Fresh coriander - for garnish
- Water - 250ml
Steps
- Rinse the masoor dal thoroughly under running water until the water runs clear.
- In a pot, add the rinsed dal and 250ml of water. Bring it to a boil, then lower the heat and let it simmer for about 15 minutes or until the dal is soft and cooked through.
- Once cooked, drain any excess water and mash the dal using a fork or potato masher until smooth.
- In a mixing bowl, combine the mashed dal, almond flour, egg, salt, cumin seeds, turmeric powder, minced garlic, grated ginger, and chopped green chili. Mix until a dough forms.
- On a lightly floured surface (using almond flour), roll out the dough into thin sheets, about 1/4 inch thick. Cut into your desired pasta shape (like fettuccine or tagliatelle).
- In a large skillet, heat olive oil over medium heat. Add the freshly cut pasta and sauté for about 3-4 minutes until slightly golden.
- Serve the keto masoor dal pasta hot, garnished with fresh coriander.
