Ingredients

  • Zucchini - 2 medium (about 400g)
  • Olive oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Red chili powder - 1/4 teaspoon (adjust to taste)
  • Salt - 1/2 teaspoon (or to taste)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Wash the zucchini and cut them into half-moon slices, about 1/2 cm thick.
  2. In a large skillet, heat the olive oil over medium heat. Once hot, add the cumin and mustard seeds. Sauté for about 30 seconds until they start to crackle.
  3. Add the sliced zucchini to the skillet and stir well to coat with the spices.
  4. Sprinkle the turmeric powder, coriander powder, garam masala, red chili powder, and salt over the zucchini. Stir to combine all the spices evenly.
  5. Cook the zucchini for about 8-10 minutes, stirring occasionally, until they are tender but still slightly crisp.
  6. Remove the skillet from heat and drizzle the lemon juice over the zucchini. Toss gently to combine.
