Ingredients

  • Garam masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut cream - 100ml
  • Salt - to taste
  • Fresh cilantro - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer or vegetable peeler to create zoodles.
  2. Heat olive oil in a large skillet over medium heat. Add cumin and mustard seeds, and let them sizzle for about 30 seconds until fragrant.
  3. Add minced garlic and grated ginger to the skillet, sauté for another minute until golden.
  4. Stir in turmeric, garam masala, and red chili powder. Cook for 1-2 minutes, mixing well to combine the spices.
  5. Reduce the heat to low and pour in the coconut cream. Stir until the sauce is smooth and heated through.
  6. Add the zoodles to the skillet, tossing them in the masala sauce until well coated. Cook for an additional 3-5 minutes until the zoodles are tender but not mushy.
  7. Season with salt to taste, then remove from heat.
