Ingredients
- Papad - 2 pieces (40g)
- Coconut oil - 2 tablespoons (30ml)
- Red onion - 1 small, finely chopped (50g)
- Tomato - 1 small, diced (50g)
- Cucumber - 1/2 small, diced (50g)
- Green chili - 1, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon (15ml)
- Salt - to taste
- Black pepper - to taste
- Chat masala - 1 teaspoon (5g)
Steps
- Heat the coconut oil in a pan over medium heat.
- Fry the papads one at a time until they are crispy and golden brown, about 30 seconds each. Remove and set aside.
- In the same pan, add the chopped onion, tomato, cucumber, and green chili. Sauté for 2-3 minutes until slightly softened.
- Remove the pan from heat and add the chopped coriander leaves, lemon juice, salt, black pepper, and chat masala. Mix well.
- Top each crispy papad with the vegetable mixture evenly.
