- Okra - 250 grams
- Coconut oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - 1/2 teaspoon (to taste)
- Fresh coriander leaves - 2 tablespoons (for garnish)
Steps
- Wash the okra thoroughly and pat them dry with a towel. Trim the ends and cut them into 1-inch pieces.
- In a non-stick skillet, heat the coconut oil over medium heat. Once hot, add the cumin and mustard seeds.
- When the seeds start to splutter, add the okra pieces and sauté for 5-6 minutes until they start to soften.
- Sprinkle in the turmeric powder, red chili powder, and salt. Stir well to coat the okra with the spices.
- Continue to cook for another 10-12 minutes, stirring occasionally, until the okra is tender and slightly crispy.
- Add the garam masala and mix well. Cook for an additional 2 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
