Ingredients

  • Okra - 250 grams
  • Coconut oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - 1/2 teaspoon (to taste)
  • Fresh coriander leaves - 2 tablespoons (for garnish)

Steps

  1. Wash the okra thoroughly and pat them dry with a towel. Trim the ends and cut them into 1-inch pieces.
  2. In a non-stick skillet, heat the coconut oil over medium heat. Once hot, add the cumin and mustard seeds.
  3. When the seeds start to splutter, add the okra pieces and sauté for 5-6 minutes until they start to soften.
  4. Sprinkle in the turmeric powder, red chili powder, and salt. Stir well to coat the okra with the spices.
  5. Continue to cook for another 10-12 minutes, stirring occasionally, until the okra is tender and slightly crispy.
  6. Add the garam masala and mix well. Cook for an additional 2 minutes.
  7. Remove from heat and garnish with fresh coriander leaves before serving.
