Ingredients

  • Tomato - 1 medium, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles, then set aside.
  2. Heat coconut oil in a large skillet over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Add diced red onion and green bell pepper to the skillet, cooking for 4-5 minutes until they soften.
