Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Greek yogurt - 1/2 cup
  • Water - 1/4 cup
  • Salt - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 5-6 leaves, chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Coconut oil - for greasing the idli molds

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
  2. In another bowl, mix Greek yogurt and water until smooth.
  3. Gradually add the yogurt mixture to the dry ingredients, stirring until a smooth batter forms.
  4. In a small pan, heat a teaspoon of coconut oil, add mustard seeds, and let them splutter.
  5. Add chopped curry leaves, green chili, and grated ginger; sauté for a minute until fragrant.
  6. Pour the tempering into the batter and mix well, then fold in chopped coriander leaves.
  7. Grease the idli molds with coconut oil and fill them with the batter.
  8. Steam the idlis in a steamer for about 10-15 minutes or until a toothpick inserted comes out clean.
  9. Serve hot with coconut chutney or your favorite low-carb dipping sauce.
