Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Ghee or coconut oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, chopped
  • Green bell pepper - 1/2, diced
  • Mozzarella cheese - 100 grams, shredded
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Steam the cauliflower florets until tender, about 8-10 minutes, then allow to cool slightly.
  3. Once cooled, drain any excess moisture from the cauliflower and pulse in a food processor until it resembles rice.
  4. In a mixing bowl, combine the processed cauliflower, almond flour, egg, salt, turmeric, cumin, and chili powder to form a dough.
  5. Line a baking tray with parchment paper and spread the cauliflower dough into a thin round shape, about 0.5cm thick.
  6. Bake the crust in the preheated oven for 15 minutes, or until golden and firm.
  7. While the crust is baking, heat ghee or coconut oil in a pan over medium heat. Sauté the chopped onion until translucent, then add the tomato and bell pepper, cooking until soft.
  8. Remove the pan from heat and mix in the fresh coriander and lemon juice.
  9. Once the crust is done baking, remove it from the oven and spread the sautéed vegetables evenly over the top.
  10. Sprinkle the shredded mozzarella cheese over the vegetables and return the pizza to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, slice, and serve hot.
