Ingredients
- Cauliflower - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Ghee or coconut oil - 2 tablespoons
- Salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Onion - 1 small, finely chopped
- Tomato - 1 medium, chopped
- Green bell pepper - 1/2, diced
- Mozzarella cheese - 100 grams, shredded
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 220°C (425°F).
- Steam the cauliflower florets until tender, about 8-10 minutes, then allow to cool slightly.
- Once cooled, drain any excess moisture from the cauliflower and pulse in a food processor until it resembles rice.
- In a mixing bowl, combine the processed cauliflower, almond flour, egg, salt, turmeric, cumin, and chili powder to form a dough.
- Line a baking tray with parchment paper and spread the cauliflower dough into a thin round shape, about 0.5cm thick.
- Bake the crust in the preheated oven for 15 minutes, or until golden and firm.
- While the crust is baking, heat ghee or coconut oil in a pan over medium heat. Sauté the chopped onion until translucent, then add the tomato and bell pepper, cooking until soft.
- Remove the pan from heat and mix in the fresh coriander and lemon juice.
- Once the crust is done baking, remove it from the oven and spread the sautéed vegetables evenly over the top.
- Sprinkle the shredded mozzarella cheese over the vegetables and return the pizza to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, slice, and serve hot.
