Ingredients

  • Almond flour - 1 cup
  • Coconut flour - 2 tablespoons
  • Psyllium husk - 1 tablespoon
  • Water - 1 cup
  • Salt - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Cauliflower - 200 grams (grated)
  • Onion - 1 small (finely chopped)
  • Green chili - 1 (finely chopped)
  • Ginger - 1 teaspoon (grated)
  • Curry leaves - 5-6 (optional)
  • Coconut oil - 2 tablespoons (for cooking)
  • Mustard seeds - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine almond flour, coconut flour, psyllium husk, turmeric powder, cumin powder, and salt.
  2. Gradually add water to the dry ingredients, stirring until a smooth batter forms. Let it rest for 10 minutes.
  3. In a pan, heat 1 tablespoon of coconut oil over medium heat. Add mustard seeds and let them splutter.
  4. Add chopped onions, green chili, ginger, and curry leaves to the pan. Sauté until onions are translucent.
  5. Add grated cauliflower to the pan and cook for 5-7 minutes until softened. Season with salt and remove from heat.
  6. Heat a non-stick skillet or tawa over medium heat and grease with a little coconut oil.
  7. Pour a ladleful of the dosa batter onto the skillet, spreading it into a thin circle. Cook for 2-3 minutes until the edges start to lift.
  8. Place a portion of the cauliflower filling in the center of the dosa, fold it over, and cook for another minute.
  9. Repeat the process for the remaining batter and filling, serving hot with coconut chutney or sambar.
