- Almond flour - 1 cup
- Coconut flour - 2 tablespoons
- Psyllium husk - 1 tablespoon
- Water - 1 cup
- Salt - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Cumin powder - 1/2 teaspoon
- Cauliflower - 200 grams (grated)
- Onion - 1 small (finely chopped)
- Green chili - 1 (finely chopped)
- Ginger - 1 teaspoon (grated)
- Curry leaves - 5-6 (optional)
- Coconut oil - 2 tablespoons (for cooking)
- Mustard seeds - 1/2 teaspoon
Steps
- In a mixing bowl, combine almond flour, coconut flour, psyllium husk, turmeric powder, cumin powder, and salt.
- Gradually add water to the dry ingredients, stirring until a smooth batter forms. Let it rest for 10 minutes.
- In a pan, heat 1 tablespoon of coconut oil over medium heat. Add mustard seeds and let them splutter.
- Add chopped onions, green chili, ginger, and curry leaves to the pan. Sauté until onions are translucent.
- Add grated cauliflower to the pan and cook for 5-7 minutes until softened. Season with salt and remove from heat.
- Heat a non-stick skillet or tawa over medium heat and grease with a little coconut oil.
- Pour a ladleful of the dosa batter onto the skillet, spreading it into a thin circle. Cook for 2-3 minutes until the edges start to lift.
- Place a portion of the cauliflower filling in the center of the dosa, fold it over, and cook for another minute.
- Repeat the process for the remaining batter and filling, serving hot with coconut chutney or sambar.
