- Almond flour - 1 cup
- Baking powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Cumin powder - 1/2 tsp
- Ginger paste - 1 tsp
- Green chili, finely chopped - 1 tsp
- Salt - to taste
- Water - 1/2 cup
- Oil (coconut or olive) - 1 tbsp
- Mustard seeds - 1 tsp
- Curry leaves - 6-8 leaves
- Fresh coriander, chopped - 2 tbsp
Steps
- In a mixing bowl, combine almond flour, baking powder, turmeric powder, cumin powder, ginger paste, chopped green chili, and salt. Mix well.
- Gradually add water to the dry ingredients until you achieve a smooth batter. Let the batter rest for 10 minutes.
- Meanwhile, prepare a steamer by bringing water to a boil.
- Grease a steaming dish or a round cake tin with oil.
- Pour the batter into the greased dish and smooth the top with a spatula.
- Place the dish in the steamer and cover. Steam for 20-25 minutes or until a toothpick inserted comes out clean.
- In a small pan, heat 1 tablespoon of oil. Add mustard seeds and let them splutter, then add curry leaves and sauté for a few seconds.
- Once the dhokla is cooked, remove it from the steamer and let it cool for a few minutes before cutting into squares.
- Drizzle the tempering (mustard seeds and curry leaves) over the dhokla and garnish with fresh coriander before serving.
