Ingredients

  • Almond flour - 1 cup
  • Baking powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Ginger paste - 1 tsp
  • Green chili, finely chopped - 1 tsp
  • Salt - to taste
  • Water - 1/2 cup
  • Oil (coconut or olive) - 1 tbsp
  • Mustard seeds - 1 tsp
  • Curry leaves - 6-8 leaves
  • Fresh coriander, chopped - 2 tbsp

Steps

  1. In a mixing bowl, combine almond flour, baking powder, turmeric powder, cumin powder, ginger paste, chopped green chili, and salt. Mix well.
  2. Gradually add water to the dry ingredients until you achieve a smooth batter. Let the batter rest for 10 minutes.
  3. Meanwhile, prepare a steamer by bringing water to a boil.
  4. Grease a steaming dish or a round cake tin with oil.
  5. Pour the batter into the greased dish and smooth the top with a spatula.
  6. Place the dish in the steamer and cover. Steam for 20-25 minutes or until a toothpick inserted comes out clean.
  7. In a small pan, heat 1 tablespoon of oil. Add mustard seeds and let them splutter, then add curry leaves and sauté for a few seconds.
  8. Once the dhokla is cooked, remove it from the steamer and let it cool for a few minutes before cutting into squares.
  9. Drizzle the tempering (mustard seeds and curry leaves) over the dhokla and garnish with fresh coriander before serving.
