  • Olive oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chilies - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Curry leaves - 10 leaves
  • Salt - to taste
  • Lemon juice - 2 tablespoons
  • Fresh coriander leaves - 2 tablespoons, chopped

Steps

  1. Begin by washing and chopping the cauliflower into florets, then pulse in a food processor until it resembles rice granules.
  2. Heat olive oil in a large pan over medium heat, then add mustard seeds and cumin seeds. Allow them to sputter for about 30 seconds.
  3. Add the finely chopped green chilies, grated ginger, and curry leaves to the pan. Sauté for 1-2 minutes until fragrant.
  4. Stir in the turmeric powder and the processed cauliflower rice. Mix well to ensure the cauliflower is coated with the spices.
  5. Cook the cauliflower rice for about 5-7 minutes, stirring occasionally, until it is tender but not mushy.
  6. Add salt to taste and pour in the lemon juice, stirring to combine thoroughly.
  7. Remove from heat and garnish with freshly chopped coriander leaves before serving.
