Ingredients

  • Bottle gourd (lauki) - 300 grams, peeled and diced
  • Oil (olive or coconut) - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Water - 100 ml

Steps

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and mustard seeds. Let them splutter for a few seconds.
  3. Add diced bottle gourd (lauki) to the pan and stir well.
  4. Sprinkle in the turmeric powder, red chili powder, and salt. Mix thoroughly.
  5. Add water to the pan, cover, and let it cook for about 10-12 minutes until the lauki is tender.
  6. Once cooked, remove the lid and add garam masala, stirring well to combine.
  7. Cook for an additional 2-3 minutes until the excess water evaporates.
  8. Garnish with fresh coriander leaves before serving.
