- Ground lamb - 300 grams
- Red onion - 1 small, finely chopped

- Ginger - 1 tablespoon, grated
- Green chili - 1, finely chopped
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 1 tablespoon, chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Egg - 1, beaten
- Olive oil - 1 tablespoon (for brushing)
- Skewers - 4 (if using wooden, soak in water for 30 minutes)
Steps
- In a large mixing bowl, combine the ground lamb, chopped red onion, minced garlic, grated ginger, chopped green chili, cilantro, mint leaves, cumin powder, coriander powder, garam masala, salt, black pepper, lemon juice, and beaten egg.
- Mix the ingredients thoroughly until well combined. Cover the bowl and let it marinate in the refrigerator for at least 15 minutes.
- Preheat your grill or oven to medium-high heat (about 200°C or 400°F).
- Divide the lamb mixture into four equal portions and shape each portion around a skewer, forming a long cylindrical kebab.
- Brush the kebabs lightly with olive oil to prevent sticking and enhance flavor.
- Place the skewers on the grill or in the oven, cooking for about 10-12 minutes, turning occasionally until they are browned and cooked through.
- Remove from the grill and let them rest for a couple of minutes before serving.
