Ingredients

  • Fresh coriander leaves - 100 grams
  • Coconut flour - 50 grams
  • Almond flour - 50 grams
  • Grated Parmesan cheese - 30 grams
  • Psyllium husk powder - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 200 ml
  • Olive oil - 2 tablespoons
  • Mixed bell peppers (diced) - 100 grams
  • Onion (finely chopped) - 50 grams
  • Garlic (minced) - 1 clove
  • Red chili powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Mozzarella cheese (shredded) - 100 grams
  • Fresh green chili (sliced) - 1 (optional)
  • Oregano - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the fresh coriander leaves, coconut flour, almond flour, grated Parmesan cheese, psyllium husk powder, baking powder, and salt.
  3. Gradually add water to the dry ingredients, mixing until a dough forms.
  4. Place the dough on a parchment-lined baking sheet and flatten it into a pizza shape, about 1/2 inch thick.
  5. Brush the pizza base with 1 tablespoon of olive oil and bake for 15 minutes until it starts to turn golden.
  6. While the base is baking, heat the remaining olive oil in a pan and sauté the onions, garlic, and mixed bell peppers until softened.
  7. Add red chili powder, turmeric powder, and sliced green chili (if using) to the vegetables and cook for another 2 minutes.
  8. Remove the pizza base from the oven and spread the sautéed vegetables evenly over it.
  9. Top with shredded mozzarella cheese and sprinkle oregano on top.
  10. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Allow to cool for a few minutes before slicing and serving.
