- Fresh coriander leaves - 100 grams
- Coconut flour - 50 grams
- Almond flour - 50 grams

- Psyllium husk powder - 1 tablespoon

- Water - 200 ml
- Olive oil - 2 tablespoons
- Mixed bell peppers (diced) - 100 grams
- Onion (finely chopped) - 50 grams
- Garlic (minced) - 1 clove
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Mozzarella cheese (shredded) - 100 grams
- Fresh green chili (sliced) - 1 (optional)
- Oregano - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the fresh coriander leaves, coconut flour, almond flour, grated Parmesan cheese, psyllium husk powder, baking powder, and salt.
- Gradually add water to the dry ingredients, mixing until a dough forms.
- Place the dough on a parchment-lined baking sheet and flatten it into a pizza shape, about 1/2 inch thick.
- Brush the pizza base with 1 tablespoon of olive oil and bake for 15 minutes until it starts to turn golden.
- While the base is baking, heat the remaining olive oil in a pan and sauté the onions, garlic, and mixed bell peppers until softened.
- Add red chili powder, turmeric powder, and sliced green chili (if using) to the vegetables and cook for another 2 minutes.
- Remove the pizza base from the oven and spread the sautéed vegetables evenly over it.
- Top with shredded mozzarella cheese and sprinkle oregano on top.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Allow to cool for a few minutes before slicing and serving.
