- Chicken breast - 300 grams, diced
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Tomato puree - 2 tablespoons
- Coconut cream - 200 milliliters
- Almond flour - 2 tablespoons
- Keto-friendly garam masala - 1 tablespoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Salt - 1 teaspoon (or to taste)
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- In a large pan, heat the coconut oil over medium heat. Add the finely chopped onion and sauté until golden brown.
- Add the minced garlic and ginger to the pan and cook for another 2 minutes until fragrant.
- Stir in the tomato puree, garam masala, cumin powder, turmeric powder, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Add the diced chicken breast to the pan and cook until browned on all sides, about 5-7 minutes.
- Sprinkle the almond flour over the chicken and mix well to coat. Cook for an additional 2 minutes.
- Pour in the coconut cream and bring to a simmer. Reduce the heat to low and cover the pan. Let it cook for 10-15 minutes until the chicken is cooked through and the sauce thickens.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
