Ingredients

  • Chicken breast - 300 grams, diced
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Tomato puree - 2 tablespoons
  • Coconut cream - 200 milliliters
  • Almond flour - 2 tablespoons
  • Keto-friendly garam masala - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a large pan, heat the coconut oil over medium heat. Add the finely chopped onion and sauté until golden brown.
  2. Add the minced garlic and ginger to the pan and cook for another 2 minutes until fragrant.
  3. Stir in the tomato puree, garam masala, cumin powder, turmeric powder, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  4. Add the diced chicken breast to the pan and cook until browned on all sides, about 5-7 minutes.
  5. Sprinkle the almond flour over the chicken and mix well to coat. Cook for an additional 2 minutes.
  6. Pour in the coconut cream and bring to a simmer. Reduce the heat to low and cover the pan. Let it cook for 10-15 minutes until the chicken is cooked through and the sauce thickens.
  7. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
