Ingredients

  • Cauliflower rice - 2 cups
  • Moong dal (split yellow lentils) - 1/4 cup
  • Green peas - 1/4 cup
  • Ghee - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 2 cups
  • Fresh coriander leaves (for garnish) - as needed

Steps

  1. Rinse the moong dal under cold water until the water runs clear, then soak it for about 15 minutes.
  2. In a large pan, heat the ghee over medium heat. Add cumin seeds and let them splutter.
  3. Add the grated ginger and sauté for about 30 seconds until fragrant.
  4. Drain the soaked moong dal and add it to the pan. Stir well to combine with the spices.
  5. Add the cauliflower rice and green peas, mixing everything together.
  6. Pour in the water, then add turmeric powder, salt, and black pepper. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes, until the dal is cooked and the vegetables are tender.
  8. Once cooked, remove from heat and let it rest for a few minutes. Garnish with fresh coriander leaves before serving.
