- Cauliflower rice - 2 cups
- Moong dal (split yellow lentils) - 1/4 cup
- Green peas - 1/4 cup
- Ghee - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 2 cups
- Fresh coriander leaves (for garnish) - as needed
Steps
- Rinse the moong dal under cold water until the water runs clear, then soak it for about 15 minutes.
- In a large pan, heat the ghee over medium heat. Add cumin seeds and let them splutter.
- Add the grated ginger and sauté for about 30 seconds until fragrant.
- Drain the soaked moong dal and add it to the pan. Stir well to combine with the spices.
- Add the cauliflower rice and green peas, mixing everything together.
- Pour in the water, then add turmeric powder, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes, until the dal is cooked and the vegetables are tender.
- Once cooked, remove from heat and let it rest for a few minutes. Garnish with fresh coriander leaves before serving.
