Ingredients

  • Besan (gram flour) - 50 grams
  • Yogurt (unsweetened, full-fat) - 100 grams
  • Water - 200 ml
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper powder - 1/4 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 8-10 leaves
  • Coconut oil - 1 tablespoon
  • Fresh coriander leaves (for garnish) - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, and salt. Whisk until smooth and free of lumps.
  2. Transfer the mixture to a saucepan and cook on medium heat, stirring continuously to avoid lump formation.
  3. Cook until the mixture thickens and starts to pull away from the sides of the pan, approximately 10-12 minutes.
  4. Once thick, quickly spread the mixture evenly onto a greased flat surface or parchment paper to a thickness of about 1/8 inch.
  5. Let it cool for a few minutes until it is easy to handle, then cut into strips about 2 inches wide.
  6. Roll each strip tightly to form small rolls and place them on a serving platter.
  7. In a small pan, heat coconut oil and add mustard seeds, cumin seeds, and curry leaves. Sauté until the seeds crackle.
  8. Drizzle the tempering over the rolled Khandvi and garnish with chopped coriander leaves.
