Ingredients
- Besan (gram flour) - 50 grams
- Yogurt (unsweetened, full-fat) - 100 grams
- Water - 200 ml
- Turmeric powder - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper powder - 1/4 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - 8-10 leaves
- Coconut oil - 1 tablespoon
- Fresh coriander leaves (for garnish) - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, and salt. Whisk until smooth and free of lumps.
- Transfer the mixture to a saucepan and cook on medium heat, stirring continuously to avoid lump formation.
- Cook until the mixture thickens and starts to pull away from the sides of the pan, approximately 10-12 minutes.
- Once thick, quickly spread the mixture evenly onto a greased flat surface or parchment paper to a thickness of about 1/8 inch.
- Let it cool for a few minutes until it is easy to handle, then cut into strips about 2 inches wide.
- Roll each strip tightly to form small rolls and place them on a serving platter.
- In a small pan, heat coconut oil and add mustard seeds, cumin seeds, and curry leaves. Sauté until the seeds crackle.
- Drizzle the tempering over the rolled Khandvi and garnish with chopped coriander leaves.
