Ingredients

  • Besan (gram flour) - 100 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Green chili, finely chopped - 1
  • Ginger, grated - 1 teaspoon
  • Coriander leaves, chopped - 2 tablespoons
  • Water - 120 milliliters
  • Lemon juice - 1 tablespoon
  • Coconut oil (for greasing) - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Curry leaves - 5-6 leaves

Steps

  1. In a mixing bowl, combine besan, baking powder, salt, turmeric powder, chopped green chili, grated ginger, and chopped coriander leaves.
  2. Add water and lemon juice to the dry ingredients and mix well to form a smooth batter. The batter should be of pouring consistency.
  3. Grease a steaming tray or a shallow dish with coconut oil and pour the batter into it.
  4. Prepare a steamer by boiling water in a pot. Place the steaming tray inside the pot, cover, and steam for about 20 minutes or until a toothpick inserted in the center comes out clean.
  5. In a small pan, heat a tablespoon of coconut oil over medium heat. Add mustard seeds and let them splutter.
  6. Add sesame seeds and curry leaves to the pan and sauté for a minute until fragrant.
  7. Once the dhokla is cooked, carefully remove it from the steamer and let it cool for a few minutes. Cut it into squares and drizzle the tempering over it before serving.
