- Besan (gram flour) - 100 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chili, finely chopped - 1
- Ginger, grated - 1 teaspoon
- Coriander leaves, chopped - 2 tablespoons
- Water - 120 milliliters
- Lemon juice - 1 tablespoon
- Coconut oil (for greasing) - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Sesame seeds - 1 teaspoon
- Curry leaves - 5-6 leaves
Steps
- In a mixing bowl, combine besan, baking powder, salt, turmeric powder, chopped green chili, grated ginger, and chopped coriander leaves.
- Add water and lemon juice to the dry ingredients and mix well to form a smooth batter. The batter should be of pouring consistency.
- Grease a steaming tray or a shallow dish with coconut oil and pour the batter into it.
- Prepare a steamer by boiling water in a pot. Place the steaming tray inside the pot, cover, and steam for about 20 minutes or until a toothpick inserted in the center comes out clean.
- In a small pan, heat a tablespoon of coconut oil over medium heat. Add mustard seeds and let them splutter.
- Add sesame seeds and curry leaves to the pan and sauté for a minute until fragrant.
- Once the dhokla is cooked, carefully remove it from the steamer and let it cool for a few minutes. Cut it into squares and drizzle the tempering over it before serving.
