Ingredients

  • Chicken breast - 250 grams, cubed
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh mint leaves - 10 grams
  • Cucumber - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/2 small, thinly sliced
  • Lettuce - 50 grams, shredded

Steps

  1. In a mixing bowl, combine the Greek yogurt, minced garlic, grated ginger, garam masala, cumin powder, paprika, lemon juice, salt, and black pepper. Mix well to create a marinade.
  2. Add the cubed chicken breast to the marinade and coat thoroughly. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
  4. Brush the skewers with olive oil and grill for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. While the chicken is grilling, prepare the mint yogurt dip by blending the remaining Greek yogurt with chopped fresh mint leaves and a pinch of salt until smooth.
  6. In a serving plate, arrange the grilled chicken kebabs alongside a fresh salad made from diced cucumber, halved cherry tomatoes, thinly sliced red onion, and shredded lettuce.
