- Almond flour - 120 grams
- Psyllium husk - 10 grams
- Egg - 1 large
- Water - 60 ml
- Salt - 1/2 tsp
- Chicken breast - 200 grams, diced
- Olive oil - 1 tbsp
- Ginger-garlic paste - 1 tsp
- Cumin powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Red chili powder - 1/2 tsp
- Garam masala - 1/4 tsp
- Lemon juice - 1 tbsp
- Fresh cilantro - 2 tbsp, chopped
- Green chili - 1, finely chopped (optional)
- Sour cream or yogurt - for serving
Steps
- In a mixing bowl, combine almond flour, psyllium husk, salt, and water with the egg to form a dough. Knead for a minute until smooth.
- Divide the dough into two equal portions and roll each portion into a thin circle using a rolling pin between parchment paper.
- Heat a non-stick pan over medium heat and cook each roti for about 2-3 minutes on each side until golden brown. Set aside.
- In the same pan, add olive oil and heat over medium-high. Add diced chicken, ginger-garlic paste, cumin, coriander, turmeric, red chili powder, and salt to taste.
- Cook the chicken for about 8-10 minutes until fully cooked, stirring occasionally. Add garam masala, lemon juice, cilantro, and green chili (if using) and mix well.
- To assemble, place a portion of the chicken mixture in the center of each roti, fold the sides, and roll to secure. Serve warm with sour cream or yogurt.
