Ingredients

  • Karela (Bitter Gourd) - 200 grams
  • Mustard Oil - 2 tablespoons
  • Cumin Seeds - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon
  • Red Chili Powder - 1 teaspoon
  • Garam Masala - 1/2 teaspoon
  • Salt - to taste
  • Onion - 1 medium, sliced
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Coriander Leaves - for garnish

Steps

  1. Wash the karela thoroughly, cut off the ends, and slice them thinly. You may optionally soak the slices in salt water for 15 minutes to reduce bitterness.
  2. Heat mustard oil in a pan over medium heat. Once hot, add cumin seeds and let them splutter.
  3. Add the sliced onions and sauté until they turn translucent.
  4. Stir in the ginger and garlic, and cook for an additional 1-2 minutes until fragrant.
  5. Add the karela slices to the pan, along with turmeric powder, red chili powder, and salt. Mix well to coat the karela with the spices.
  6. Cover the pan and cook for about 10-15 minutes, stirring occasionally, until the karela is tender.
  7. Sprinkle garam masala over the cooked karela and mix well. Cook for an additional 2 minutes without the lid.
  8. Garnish with fresh coriander leaves and serve hot.
