- Karela (Bitter Gourd) - 200 grams
- Mustard Oil - 2 tablespoons
- Cumin Seeds - 1 teaspoon
- Turmeric Powder - 1/2 teaspoon
- Red Chili Powder - 1 teaspoon
- Garam Masala - 1/2 teaspoon
- Salt - to taste
- Onion - 1 medium, sliced
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Coriander Leaves - for garnish
Steps
- Wash the karela thoroughly, cut off the ends, and slice them thinly. You may optionally soak the slices in salt water for 15 minutes to reduce bitterness.
- Heat mustard oil in a pan over medium heat. Once hot, add cumin seeds and let them splutter.
- Add the sliced onions and sauté until they turn translucent.
- Stir in the ginger and garlic, and cook for an additional 1-2 minutes until fragrant.
- Add the karela slices to the pan, along with turmeric powder, red chili powder, and salt. Mix well to coat the karela with the spices.
- Cover the pan and cook for about 10-15 minutes, stirring occasionally, until the karela is tender.
- Sprinkle garam masala over the cooked karela and mix well. Cook for an additional 2 minutes without the lid.
- Garnish with fresh coriander leaves and serve hot.
