  • Erythritol or monk fruit sweetener - 3 tablespoons
  • Unsweetened coconut milk - 2 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Ghee (clarified butter) - 1 tablespoon

Steps

  1. Soak the raw cashews in warm water for about 2 hours, then drain and pat dry.
  2. Blend the soaked cashews in a food processor until they form a smooth paste, adding a little coconut milk if necessary to achieve the right consistency.
  3. In a non-stick pan, heat the ghee over low heat and add the cashew paste, erythritol, and cardamom powder.
  4. Stir continuously for about 10-15 minutes until the mixture thickens and starts to leave the sides of the pan.
  5. Remove from heat and let the mixture cool slightly, then transfer to a greased plate or parchment paper.
  6. Flatten the mixture with a rolling pin to about 1/4 inch thickness and let it cool completely.
  7. Once cooled, cut into diamond shapes and garnish with silver leaf if desired.
