Ingredients

  • Plain Greek yogurt - 250 grams
  • Water - 500 ml
  • Almond flour - 100 grams
  • Chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Ghee or coconut oil - 2 tablespoons
  • Black mustard seeds - 1 teaspoon
  • Curry leaves - 10 leaves
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix the Greek yogurt with water, chili powder, turmeric, cumin, and salt to create the kadhi base; whisk until smooth.
  2. In a saucepan, heat 1 tablespoon of ghee or coconut oil over medium heat; add the mustard seeds and wait for them to crackle.
  3. Pour the yogurt mixture into the saucepan and cook on low heat for 15-20 minutes, stirring occasionally until it thickens slightly.
  4. In a separate bowl, mix the almond flour with salt, chili powder, and a bit of water to form a thick batter.
  5. Heat the remaining ghee or coconut oil in a frying pan over medium heat; drop spoonfuls of the almond flour batter into the oil and fry until golden brown, about 2-3 minutes on each side.
  6. Once the pakoras are cooked, drain them on paper towels and add them to the kadhi just before serving.
  7. Garnish with grated ginger, minced garlic, and fresh cilantro; serve hot.
