- Plain Greek yogurt - 250 grams
- Water - 500 ml
- Almond flour - 100 grams
- Chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Ghee or coconut oil - 2 tablespoons
- Black mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Fresh cilantro - for garnish
Steps
- In a bowl, mix the Greek yogurt with water, chili powder, turmeric, cumin, and salt to create the kadhi base; whisk until smooth.
- In a saucepan, heat 1 tablespoon of ghee or coconut oil over medium heat; add the mustard seeds and wait for them to crackle.
- Pour the yogurt mixture into the saucepan and cook on low heat for 15-20 minutes, stirring occasionally until it thickens slightly.
- In a separate bowl, mix the almond flour with salt, chili powder, and a bit of water to form a thick batter.
- Heat the remaining ghee or coconut oil in a frying pan over medium heat; drop spoonfuls of the almond flour batter into the oil and fry until golden brown, about 2-3 minutes on each side.
- Once the pakoras are cooked, drain them on paper towels and add them to the kadhi just before serving.
- Garnish with grated ginger, minced garlic, and fresh cilantro; serve hot.
