Ingredients

  • Firm tofu - 200 grams
  • Ghee or coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, pureed
  • Green bell pepper - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Kashmiri red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. Heat ghee or coconut oil in a pan over medium heat.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in grated ginger and minced garlic, cooking for another minute until fragrant.
  5. Add the pureed tomato and cook until the oil separates from the mixture.
  6. Mix in the diced green and red bell peppers, cooking for about 5 minutes until slightly softened.
  7. Add Kashmiri red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Stir well to combine.
  8. Gently fold in the tofu cubes, ensuring they are coated with the spice mixture.
  9. Cover and cook for an additional 5-7 minutes, allowing the tofu to absorb the flavors.
  10. Sprinkle garam masala on top and mix gently before removing from heat.
  11. Garnish with fresh coriander leaves and serve hot.
