- Firm tofu - 200 grams
- Ghee or coconut oil - 2 tablespoons

- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Tomato - 1 medium, pureed
- Green bell pepper - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Kashmiri red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Press the tofu to remove excess water, then cut it into cubes.
- Heat ghee or coconut oil in a pan over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in grated ginger and minced garlic, cooking for another minute until fragrant.
- Add the pureed tomato and cook until the oil separates from the mixture.
- Mix in the diced green and red bell peppers, cooking for about 5 minutes until slightly softened.
- Add Kashmiri red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Stir well to combine.
- Gently fold in the tofu cubes, ensuring they are coated with the spice mixture.
- Cover and cook for an additional 5-7 minutes, allowing the tofu to absorb the flavors.
- Sprinkle garam masala on top and mix gently before removing from heat.
- Garnish with fresh coriander leaves and serve hot.
