- Cauliflower - 300 grams (riced)
- Paneer - 200 grams (cubed)
- Bell pepper (capsicum) - 1 medium (diced)
- Onion - 1 medium (finely chopped)
- Tomato - 1 medium (pureed)
- Ginger-garlic paste - 1 tablespoon
- Kadai masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Coconut oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Begin by ricing the cauliflower using a food processor or grater, then set aside.
- Heat coconut oil in a pan over medium heat and add the finely chopped onions. Sauté until golden brown.
- Add ginger-garlic paste and sauté for another minute until fragrant.
- Stir in the diced bell pepper and cook for 2-3 minutes until slightly softened.
- Add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
- Add the cubed paneer and Kadai masala to the pan, mixing well to coat the paneer with the spices. Cook for another 5 minutes.
- In a separate pan, lightly sauté the riced cauliflower for about 3-4 minutes until tender but not mushy.
- Combine the sautéed cauliflower rice with the paneer mixture, stirring gently to mix everything well. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
