Ingredients

  • Cauliflower - 300 grams (riced)
  • Paneer - 200 grams (cubed)
  • Bell pepper (capsicum) - 1 medium (diced)
  • Onion - 1 medium (finely chopped)
  • Tomato - 1 medium (pureed)
  • Ginger-garlic paste - 1 tablespoon
  • Kadai masala - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Coconut oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Begin by ricing the cauliflower using a food processor or grater, then set aside.
  2. Heat coconut oil in a pan over medium heat and add the finely chopped onions. Sauté until golden brown.
  3. Add ginger-garlic paste and sauté for another minute until fragrant.
  4. Stir in the diced bell pepper and cook for 2-3 minutes until slightly softened.
  5. Add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
  6. Add the cubed paneer and Kadai masala to the pan, mixing well to coat the paneer with the spices. Cook for another 5 minutes.
  7. In a separate pan, lightly sauté the riced cauliflower for about 3-4 minutes until tender but not mushy.
  8. Combine the sautéed cauliflower rice with the paneer mixture, stirring gently to mix everything well. Cook for an additional 2 minutes.
  9. Garnish with fresh coriander leaves before serving.
