Ingredients

  • Paneer - 200 grams
  • Bell peppers (mixed colors) - 150 grams
  • Onion - 1 medium (about 100 grams)
  • Tomato - 1 medium (about 100 grams)
  • Ginger - 1 inch piece
  • Garlic - 4 cloves
  • Green chili - 1 (adjust to taste)
  • Garam masala - 1 teaspoon
  • Kashmiri red chili powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat. Add cumin seeds and let them sizzle.
  2. Finely chop the onion, ginger, garlic, and green chili, and add them to the pan. Sauté until the onion is translucent.
  3. Chop the tomato and bell peppers into small pieces. Add the tomato to the pan and cook until it softens.
  4. Add turmeric powder, Kashmiri red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
  5. Add the chopped bell peppers and stir-fry for about 5 minutes until they are slightly tender but still crisp.
  6. Cut the paneer into cubes and add it to the pan. Mix gently to coat the paneer with the spices.
  7. Sprinkle garam masala over the dish and stir. Cook for another 5 minutes, allowing the flavors to meld.
  8. Remove from heat and garnish with fresh coriander leaves before serving.
